Bring the rich, authentic flavors of South India to your kitchen with this traditional Sambar recipe, crafted by Mysore Magic.
Ingredients
For Sambar:
- Toor dal (Split pigeon peas) - 1 cup
- Tamarind - Small lemon-sized ball
- Mixed vegetables (carrot, drumstick, brinjal, beans, etc.) - 2 cups, chopped
- Turmeric powder - ½ tsp
- Salt - To taste
- Water - As needed
For Mysore Magic Sambar Powder:
Use 2-3 tablespoons of Mysore Magic Sambar Powder (prepared as per our earlier recipe).
For Tempering:
- Coconut oil or ghee - 2 tbsp
- Mustard seeds - 1 tsp
- Cumin seeds - ½ tsp
- Asafoetida (Hing) - A pinch
- Curry leaves - 1 sprig
- Dry red chilies - 2, broken
- Fresh coriander leaves - For garnish
Instructions
Cook the Toor Dal:
- Wash the toor dal thoroughly and pressure cook with 2 cups of water, ½ tsp turmeric powder, and a few drops of oil until soft (3-4 whistles).
- Mash the cooked dal and keep it aside.
Prepare Tamarind Extract:
- Soak the tamarind in ½ cup warm water for 10 minutes.
- Extract the pulp and set it aside.
Cook the Vegetables:
- In a large pot, cook the vegetables with 2 cups of water and a pinch of salt until they are tender.
Combine Ingredients:
- To the pot with cooked vegetables, add the mashed toor dal, tamarind extract, and Mysore Magic Sambar Powder.
- Stir well and adjust the consistency by adding water as needed.
- Simmer the mixture on low heat for 5-7 minutes, allowing the flavors to meld.
Temper the Sambar:
- Heat coconut oil or ghee in a small pan.
- Add mustard seeds and let them splutter.
- Add cumin seeds, dry red chilies, asafoetida, and curry leaves.
- Pour this aromatic tempering over the simmering sambar and mix gently.
Final Touch:
- Garnish with freshly chopped coriander leaves.
- Optionally, add a teaspoon of jaggery for a hint of sweetness to balance the flavors.
Serving Suggestions
- Serve hot with steamed rice, drizzled with ghee, for a wholesome meal.
- Pair it with soft idlis, crispy dosas, or vadas for a classic South Indian breakfast or snack.
Mysore Magic Tip
For an enhanced flavor, add a dollop of fresh coconut paste or coconut milk to the sambar before turning off the heat. This brings out the "Soul of South India" in every bite!
