MYSORE MAGIC - SPECIAL SAMBAR RECIPE

Bring the rich, authentic flavors of South India to your kitchen with this traditional Sambar recipe, crafted by Mysore Magic. 


Ingredients

For Sambar:

  • Toor dal (Split pigeon peas) - 1 cup
  • Tamarind - Small lemon-sized ball
  • Mixed vegetables (carrot, drumstick, brinjal, beans, etc.) - 2 cups, chopped
  • Turmeric powder - ½ tsp
  • Salt - To taste
  • Water - As needed

For Mysore Magic Sambar Powder:
Use 2-3 tablespoons of Mysore Magic Sambar Powder (prepared as per our earlier recipe).

For Tempering:

  • Coconut oil or ghee - 2 tbsp
  • Mustard seeds - 1 tsp
  • Cumin seeds - ½ tsp
  • Asafoetida (Hing) - A pinch
  • Curry leaves - 1 sprig
  • Dry red chilies - 2, broken
  • Fresh coriander leaves - For garnish

Instructions

  1. Cook the Toor Dal:

    • Wash the toor dal thoroughly and pressure cook with 2 cups of water, ½ tsp turmeric powder, and a few drops of oil until soft (3-4 whistles).
    • Mash the cooked dal and keep it aside.
  2. Prepare Tamarind Extract:

    • Soak the tamarind in ½ cup warm water for 10 minutes.
    • Extract the pulp and set it aside.
  3. Cook the Vegetables:

    • In a large pot, cook the vegetables with 2 cups of water and a pinch of salt until they are tender.
  4. Combine Ingredients:

    • To the pot with cooked vegetables, add the mashed toor dal, tamarind extract, and Mysore Magic Sambar Powder.
    • Stir well and adjust the consistency by adding water as needed.
    • Simmer the mixture on low heat for 5-7 minutes, allowing the flavors to meld.
  5. Temper the Sambar:

    • Heat coconut oil or ghee in a small pan.
    • Add mustard seeds and let them splutter.
    • Add cumin seeds, dry red chilies, asafoetida, and curry leaves.
    • Pour this aromatic tempering over the simmering sambar and mix gently.
  6. Final Touch:

    • Garnish with freshly chopped coriander leaves.
    • Optionally, add a teaspoon of jaggery for a hint of sweetness to balance the flavors.

Serving Suggestions

  • Serve hot with steamed rice, drizzled with ghee, for a wholesome meal.
  • Pair it with soft idlis, crispy dosas, or vadas for a classic South Indian breakfast or snack.

Mysore Magic Tip

For an enhanced flavor, add a dollop of fresh coconut paste or coconut milk to the sambar before turning off the heat. This brings out the "Soul of South India" in every bite!
